Description

Some projects are born out of ambition, others out of a kind of intimate necessity. Les Terres De Philéandre belongs to the latter: David Duband 's "field notebook" to get out of his comfort zone in Côte de Nuits and listen to other Burgundy hillsides. In 2018, he decided to sign long-term contracts with like-minded winegrowers and, with un-Burgundian courage, to open the door to freer and less made-up vinifications. His idea was simple and demanding: let the terroir speak louder than wood, technique and ego. Les Terres De Philéandre Savigny-Lès-Beaune is 100% Pinot Noir, born in a village that can be rustic if you squeeze it, but very fine when you treat it with tact.

Savigny-Lès-Beaune (in the Côte de Beaune) combines a slow-ripening continental climate with well-drained clay and limestone soils: light stone, natural freshness and fruit that never screams. Here Pinot Noir becomes more tactile than lush; more "texture" than perfume.

Winemaking

At Les Terres De Philéandre Savigny-Lès-Beaune, the grapes come in as whole as possible and are worked with 60% whole cluster, looking for fine spice and an herbal backbone. Maceration lasts 15 days, with 5-7 pumpovers per day and occasional pumping over: measured extraction, no sharp edges. After pressing, the wine is decanted for two weeks in barrels before ageing: 13 months in oak (30% new and 70% from 1 to 5 uses). Afterwards, it rests for a minimum of 3 months in tank and is bottled without fining or filtering.

Taste

In Les Terres De Philéandre Savigny Les Beaune, the nose starts with crisp red cherry and raspberry, but the serious side quickly appears: damp undergrowth, black tea, a trace of white pepper and that chalky note reminiscent of freshly struck stone. The palate is pure Burgundian pulse: juicy entry, silky centre, fine tannin and an edge of acidity that stretches the wine like a bow. The red fruit turns darker towards the finish (cherry, light plum), with a saline, earthy echo that invites another sip. Elegant, mineral, long: a Savigny-Lès-Beaune that doesn't seek applause, but precision.
