Description

Karnage ZAK is surprisingly made from Mauzac grapes, a grape variety that comes specifically from Castelreng dans l'Aude, located in the Languedoc-Roussillon region, and bottled in Jura by Charles Dagand and Stéphane Planche.

Winemaking

The whole cluster is used, which undergoes direct pressing, followed by slow spontaneous fermentation in tank. Throughout this process, no racking is carried out, allowing the wine to retain all its natural characteristics. The wine was bottled in July of the following year without added sulphites and with a limited production of 2,100 bottles.

Taste

Karnage ZAK is an explosive wine with intense notes and light volatile acidity, accompanied by some reduction. However, what really distinguishes this wine is its green and pungent component, which results in an ideal harmony between bitterness and high acidity, offering a unique and memorable taste experience.
