The story of Hidalgo Oloroso Seco Gobernador begins in the silent warehouses of Bodegas Hidalgo, in Sanlúcar de Barrameda, where tradition is not a marketing resource but a way of life. This dry oloroso is the result of a deliberate decision: to allow a wine that began its life under a veil of flor to be exposed to oxygen, initiating a prolonged oxidative ageing process. This thoughtful and respectful transition gives the wine exceptional structure and depth. The wine is made exclusively from Palomino grapes, grown in the chalky, organic-poor soils of the Jerez-Xérès Sherry appellation, where the combination of Atlantic breeze and relentless sunshine results in slow ripening, ideal for expressing the saline and mineral character of the region.
