Description
From the heart of Jerez emerges a wine that defies convention: Fernando de Castilla Oloroso Antique. Jan Pettersen, its creator, Norwegian by birth but Andalusian by conviction, bought the old bodega in 1999 and decided, with a mixture of respect and daring, to dispense with the superfluous. Thus was born the Antique line, wines that are neither filtered nor clarified, and which express without make-up the soul of the deepest Jerez. One of his most striking decisions was to bottle this Oloroso in clear glass, showing without reservation the brilliant mahogany colour that has taken decades to mature. The wine comes exclusively from Palomino Fino grapes, grown in the albariza soils -white, chalky, light-laden- of the highlands of Jerez, which impart a dry minerality and unparalleled structural tension.
Winemaking
Fernando de Castilla Oloroso Antique is fermented completely in stainless steel tanks and fortified until it reaches 20 % vol., thus avoiding the formation of velo de flor. From there, it begins a long oxidative ageing process using the traditional system of criaderas and soleras, where it spends an average of more than 20 years in American oak casks. It is not filtered or subjected to stabilisation treatments, which allows it to preserve all its authenticity and concentration. The result is an Oloroso VOS (Very Old Sherry), an appellation that certifies its exceptional maturity and complexity.
Taste
On the nose, Fernando de Castilla Oloroso Antique is deep and expressive: dried figs, toasted hazelnuts, orange peel, old wood and a faint balsamic background. There are also notes of salted caramel, nutmeg and fine varnish. On the palate, it is dry and powerful, with an unctuous texture that balances its structured profile. The acidity, still lively after decades of ageing, keeps it agile, while echoes of prunes, toffee, bitter cocoa and citrus peel give it an almost endless complexity. The finish is long, saline, persistent, with a spicy memory that evokes fine leather and bitter almonds. A wine to drink at a leisurely pace, ideal with small game, cured cheeses or simply on its own, as the sublime is enjoyed.
