The NV Antique Amontillado is amber-colored and has a subtle nose of tobacco, some iodine, pollen, beeswax and hazelnuts. The medium- to full-bodied palate shows lots of concentration and acidity, with a very intense finish. 4,000 bottles are produced yearly. Drink 2013-2017.

Description
Decades ago, in the historic soleras of Jerez-de-la-Frontera, visionary Jan Pettersen revitalised Bodegas Rey Fernando de Castilla with a clear mission: to restore the aristocratic and pure character of Jerez wine. Among his most unique creations, Fernando de Castilla Amontillado Antique embodies that uncompromising philosophy. Born from the Palomino Fino grape grown in albariza soils, this wine is built on a base of biologically aged Fino, which after more than eight years under veil, is reinforced with wine alcohol until it reaches 18% and is transferred to an oxidative solera where it rests for another 12 years.
Winemaking
Fernando de Castilla Amontillado Antique begins as a traditional Fino, made from Palomino Fino fermented in stainless steel. After its initial biological ageing, the wine is fortified, eliminating the flor veil, and enters an oxidative ageing process in old American oak casks using the criaderas and solera system. Over a further 12 years, the wine develops layers of complexity, without aggressive fining or filtering, allowing it to retain all the authenticity of its expression.
Taste
The profile of Fernando de Castilla Amontillado Antique is an instantly seductive array of nuances: notes of toasted hazelnuts, walnut, sea salt and an echo of dried citrus peel. The nose is intense but precise, with hints of black tea, incense, beeswax and blond tobacco. The palate is taut, absolutely dry, with vibrant acidity supporting its structure and balancing volume. It has a silky texture and a long finish, with a saline and spicy aftertaste that invites you to repeat. This Jerez amontillado is ideal with cured cheeses, consommés, foie gras or even Asian dishes.
In short, Fernando de Castilla Amontillado Antique is a jewel without make-up, a cult wine that pays homage to time, the land and the extreme patience of Jerez's good work.
