Fernando de Castilla was born into a family that sees Jerez as a fluid landscape. Here, history matters, but what matters even more is how it is interpreted: unvarnished, with precision and with absolute confidence in the Palomino Fino grape and the albariza soils. The idea behind Fernando de Castilla Classic Dry Fino was not to create a gentle fino, but to present a straightforward, dry and essential expression of the Marco de Jerez. The grapes come from Jerez de la Frontera, within the Jerez Xérès Sherry Designation of Origin, where the Atlantic climate, white limestone and centuries-old tradition transform a understated variety into a powerful expression of its origins. Here there is no exuberance, but rather salt, chalk, yeast and a noble austerity that defines great fino wines.

Production

The production of Fernando de Castilla Classic Dry Fino begins with fermentation in stainless steel to preserve the purity of the must. The wine is then fortified to 15% vol. and transferred to American oak casks, where it undergoes biological ageing under the flor under the criaderas and soleras system. It remains there for an average of five years. The decisive factor is not the wood, but the flor: it dries out the wine, sharpens it, making it more saline, more refined and more precise. It does not seek volume or sweetness, but rather tension, purity and a form of inner lightness that only Jerez knows how to deliver with such precision.

Taste

In the glass, Fernando de Castilla Classic Dry Fino displays a noble austerity. The nose is refined and restrained, characterised by raw almond, bread dough, fresh yeast, lemon zest and a salty, almost iodine-like note. Nothing is overpowering. Everything is dry, chalky and deeply characteristic of sherry.

On the palate, it cuts through like a sharp blade: truly dry, taut, clean, with bitter almond, salty lemon, green olive and a sensation of chalk and bone that always evokes the albariza. The salinity lingers on the palate, the noble bitterness lengthens the finish, and the wine’s overall fluidity makes it tremendously gastronomic. A classic, austere, refreshing Jerez sherry, made for lovers of minerality and precision.
