The flagship red 2021 Reserva was cropped from a superb vintage in many regions in Spain. It showcases the character of the village of La Aguilera, produced with Tempranillo and small percentages of other varieties from the very old vineyards that fermented together with full clusters and indigenous yeasts, foot trodden in concrete and matured in French oak barrels for 35 months, including five months of a very slow malolactic fermentation. It's a vintage I hold in great esteem, but it's true that it's a powerful year for the long term. The wine is still young and tender, spicy and toasty, with notes of high-quality oak and a core of ripe fruit and aromatic herbs. The palate is medium- to full-bodied with terrific balance and abundant fine tannins. It comes in at 14% alcohol, keeping a pH of 3.36, denoting good ripeness and superb freshness. Though it's serious, tasty and elegant now, it's still young and has years ahead of it. 28,482 bottles and 675 magnums produced. It was bottled in September 2025.

Description
Dominio del Águila Reserva is a red wine made with 95% Tempranillo grapes and a minimum of Blanca del país, Garnacha and Bobal.
This wine has been crafted from a harmonious blend of red and white grape varieties by the Dominio del Águila winery in the town of La Aguilera under the Ribera del Duero appellation.
The grapes used come from vines more than a century old in La Aguilera, in Burgos, planted on sandy-clay soils at 900 metres above sea level.
Winemaking
The grapes are harvested by hand. For the production of Dominio del Águila Reserva, the fermentation process takes place with indigenous yeasts in concrete tanks, and the grapes are traditionally crushed whole, without destemming.
The wine obtained is aged for 29 months in French oak barrels, rounded off and bottled.
Taste
Dominio del Águila Reserva is a red wine with fruity aromas and herbal notes. It is tender, expressive and aromatic.
On the palate, it is full-bodied and well-structured, with a lively acidity that adds freshness, a fruity passage, pleasant tannins and a lingering finish with a fine bitterness. It is a classic wine!
