The classic Cava varieties - Macabeo, Xarel.lo and Parellada - come from vineyards grown without pesticides or herbicides in the limestone soils of the Alt Penedès, where the thermal contrasts and Mediterranean climate preserve the natural freshness of the fruit. Winemaking
The production process of Codorníu Cuvée Original Ecológico Brut Nature begins with an early harvest, designed to preserve the grapes' acidity and freshness to the maximum. After a careful manual selection, the grapes are fermented in stainless steel tanks at a low temperature to preserve their primary aromas. The second fermentation takes place in the bottle, following the traditional method, where the wine remains in contact with its lees for at least 9 months to provide a creamy texture without losing tension. No expedition liqueur is added: this is an honest, dry, precise Brut Nature without make-up. Disgorging and bottling are carried out with extreme neatness to guarantee all the natural expression of the wine.
Taste
