There are two experimental Manzanillas aged on opposite sides of the Bodega de la Arboledilla, one from the east (levante) and another one from the west (poniente) to show how location within the winery affects the style of the wines. The NV Arboledilla Levante Manzanilla Pasada En Rama is its first incarnation, the Saca Junio 2017, from the warmer (levante) exposition—the cave is 180 meters long and the eastern exposition, which is further away from the sea and where the windows are closed, is warmer. But somehow the wine here feels sharper and with some citrus hints. This is bottled between five and six years, when the salinity is stronger in the wine. This has some bitterness on the palate and feels a little high toned and very intense. 600 bottles were produced. They will do more bottlings in the future, and chances are the character of the levante and poniente wines will change depending on the time of the bottling. What is fascinating is that they are different, and they will be different in future sacas!

Description
Barbadillo Manzanilla Arboledilla Levante is a singular wine that is part of a series of Manzanillas aged under specific conditions within the Arboledilla winery in Sanlúcar de Barrameda. This particular wine is made with 100% Palomino Fino grapes, harvested in albariza soils, characteristic of the Jerez region. The barrels where it ages are oriented towards the east, where the warm Levante wind affects the environment inside the winery, generating higher temperature conditions compared to other areas of the same winery.
Winemaking
The winemaking process follows the traditional biological ageing under flor, but the specific location within the winery gives this wine unique characteristics. It is bottled after ageing for 5 to 6 years, which allows it to develop an organoleptic profile of great intensity and a notable salinity, as well as a more robust character than other Manzanillas.
Taste
The flavour of Barbadillo Manzanilla Arboledilla Levante is a reflection of its origin at the eastern end of the winery. It has an outstanding freshness with marked citrus notes, which contrast with the intensity of its salinity. On the palate, a slight bitterness is perceived, accompanied by a sharp and pungent profile. These flavours are the result of the effect of the Levante wind on the velo de flor, which develops in warmer conditions. The acidity is vibrant and perfectly balanced, making this wine a complex and unique experience for Manzanilla connoisseurs.
