The NV Arboledilla Poniente Manzanilla Pasada En Rama, from the Saca Junio 2017, is a Manzanilla aged in the cooler side of the Arboledilla winery, in the west facing the sea, where they keep the windows open to capture the sea breezes. This is the usual configuration of the Sherry wineries, but what is extraordinary here is that this cave is 180 meters long and the contrast from one side to the other is greater than in most wineries. The wines aged in the east and the wines aged in the west are very different, and they wanted to capture those differences and show them to the public.

Barbadillo Manzanilla Arboledilla Poniente is a wine that reflects the tradition and uniqueness of Sanlúcar de Barrameda. It is made from the Palomino Fino grape variety, which is the base of most manzanillas. This specific edition comes from butts located in the area of the winery facing the west wind, a sea wind that blows from the Atlantic and has a notable influence on its ageing.
Elaboration
The winemaking process follows the traditional system of criaderas and soleras, where the wine ages in oak barrels under a veil of flor. This veil, a natural layer of yeasts that forms on the surface of the wine, is essential to maintain its fresh and saline characteristics by protecting the liquid from contact with oxygen. Barbadillo Manzanilla Arboledilla Poniente is aged for longer than conventional Manzanilla, which makes it a Manzanilla Pasada, giving it greater complexity and a more mature character.
