Description
For more than five centuries, Codorníu has been cultivating the art of Cava with courage and precision. Ars Collecta, a collection that honours this heritage with a modern outlook, is born in its micro-winery Celler Jaume. Ars Collecta Brut Blanc de Noirs is the result of a bold decision: to reinterpret red varieties -Pinot Noir, Trepat and Xarel.lo- to give life to an elegant, deep and gastronomic sparkling wine.
The grapes that give life to Ars Collecta Brut Blanc de Noirs come from selected vineyards in Segrià (continental), Conca de Barberà and Penedès (both Mediterranean), where the stony, chalky soils, combined with extreme, temperate climates, offer tension, natural acidity and structure. In a particularly cold vintage, the team decided to preserve the extreme freshness of the Pinot Noir, thus respecting the vibrant character of this Cava.
Winemaking
Manual harvesting and gentle pressing ensure the extraction of the finest must. The varieties that make up Ars Collecta Brut Blanc de Noirs are fermented separately in stainless steel at a low temperature, preserving the varietal expression. After blending, the Cava undergoes a second fermentation in the bottle and is aged on its lees for more than 35 months, following the traditional method. This long autolysis gives Ars Collecta Brut Blanc de Noirs a creamy texture, fine bubbles and persistent elegance.
Taste
Visually, Ars Collecta Brut Blanc de Noirs has delicate bubbles and golden-straw reflections. The nose is subtle and expressive: notes of white flowers, raspberry, sour cherry, fresh citrus and a dry mineral background. There is also a fine patina of toast and white spices.
On the palate, Ars Collecta Brut Blanc de Noirs is a vibrant Cava: fresh attack, integrated bubbles and an acidity that structures without dominating. Flavours of lemon peel, pink grapefruit, green apple and an echo of red fruits stand out. The finish is long, saline and slightly bitter, like citrus peel, making it ideal for pairing with sushi, carpaccio, cured fish or desserts with red fruits.
