A one-off sparkling white with almost 20 years in bottle with lees, the 2004 Homenatge a Josep Mata Capellades was released to celebrate the centenary of the winery, as Josep Mata Capellades started in 1924, experimenting with sparkling wines, working in the disgorgement of such wines in his village, Sant Sadurní d'Anoia. Recaredo was his father's nickname, and he renamed the business after his father.

Description
In 1924, in Sant Sadurní d'Anoia, Josep Mata Capellades started working on sparkling wines when few in the region had mastered the art of disgorging. With intuition, patience and absolute respect for the land, he laid the foundations of what is today Recaredo. This wine, Recaredo Homenatge a Josep Mata Capellades, was created to honour his centenary and visionary spirit. A unique sparkling wine, made from Macabeu and Xarel.lo from old vines grown in deep calcareous soils under biodynamic practices. The Mediterranean environment of the Corpinnat DO - with mild days and cool nights - lends tension, structure and minerality to the grapes, essential elements of this bottled tribute.
Winemaking
Recaredo Homenatge a Josep Mata Capellades is vinified with an almost monastic precision. The fermentation of the base wine is carried out in stainless steel tanks, respecting the varietal expression as much as possible. The wine then rests for 224 months on its lees, which makes it a rarity: almost 19 years of bottle ageing under natural cork stoppers. This deliberate choice allows for a slow and complex development. Disgorging, faithful to the house's traditional method, is carried out manually without freezing the neck of the bottle. No expedition liqueur is added: this is a pure Brut Nature, without make-up.
Taste
The tiny, persistent bubbles caress the palate like liquid velvet. The nose reveals a serene complexity: dry hay, resin, notes of gingerbread, beeswax and a subtle background of wet chalk. On the palate, Recaredo Homenatge a Josep Mata Capellades is dry, elegant, with a precise acidity that lengthens the wine over time and closes it with a delicate saline echo. There are no concessions to easy fruit; here depth, texture and time rule. It is a Cava of contemplation, where each sip is a lesson in patience, rigour and memory. A silent jewel, forged over time.
