The NV Isabela is a Cream Sherry produced as a blend of Oloroso made with Palomino and Pedro Ximénez at 17.5% alcohol and some 120 grams of residual sugar. It's a dark mahogany color with a nose of incense, spices, dates and raisins and a very sweet palate with flavors of sugar cane that are a little roasted.

Description
From the heart of Macharnudo Alto, just five kilometres northeast of Jerez de la Frontera, comes a wine of uncompromising elegance: Valdespino Isabela Cream. The bodega, with roots going back to the 13th century (and formally founded in 1430), decided to bring this wine to life at the dawn of the 2000s. Named in homage to Isabela, wife of José Estévez -owner of the Estévez Group that today frames Valdespino-, this wine embodies a gesture of affection and boldness in the face of tradition. From the white, chalky albariza that retains the scarce Andalusian rainfall to the eternal secret of the criaderas and soleras system, Valdespino Isabela Cream emerges as a canvas where history, terroir and the winemaker's courageous decision converge.
Winemaking
Made from the vineyards of Macharnudo Alto, whose Palomino Fino and Pedro Ximénez vines rest on albariza, Valdespino Isabela Cream is a blend of great technical finesse and tradition. It is composed of approximately 75 % Oloroso (Palomino Fino) and 25 % Pedro Ximénez. Some of it comes from an ancestral solera that has been aged for more than fifteen years, which gives the wine a depth that goes beyond the mere passage of time. The result is a creamy sherry with around 120 grams of sugar per litre - a measured, restrained sweetness in the service of balance. Its ageing, between oak and solera, provides woody, nutty tones and an intense mahogany colour that anticipates the richness of the drink.
Taste
On the nose, Valdespino Isabela Cream opens with a symphony of dried and candied fruits: sultanas, dried figs, dates and that depth of burnt orange or even sour rind, wrapped in hints of walnut, wood and perhaps a hint of dried mushrooms or undergrowth. The palate is rich, but never cloying: the initial sweetness of toffee and bourbon sultana gives way to some noble dryness, subtle wood spice, toasted nuts, burnt caramel and gently bitter tannins, reminiscent of walnut shell or prune skin. The wine has a long finish, where sweetness and dry aftertaste blend harmoniously.
Overall, Valdespino Isabela Cream moves gracefully between sweet and dry. It is not a cloying dessert wine, but a "cream" that retains dignity. Its aromatic and tactile richness -sweet, spicy, toasty- dialogues with the minerality of the albariza and the sophistication of the solera. Ideal with desserts based on dried fruit or candied fruit, it enhances after-dinner drinks without being overpowering.
