Picked out ultra-selectively from all of their Pinot Gris vineyards, the Trimbach 2005 Pinot Gris Selection de Grains Nobles displays high-toned, botrytis-engendered aromas of honey, brown spices, peach preserves, and white truffle. Remarkably creamy and honeyed, with spice and truffle-infused peach preserves and tangerine liqueur, yet preserving (as have all of these best 2005s) a luscious core of fresh fruit, rich and viscous, let light on its feet and crystal clear. Butterscotch and toasted hazelnut, join the richly diverse choir here for a long, serene finish. Pierre Trimbach says the quality of material and course of fermentation here were so picture-perfect that he added only a very small dosage of sulfur to finish the wine. While there would be no need to defer the pleasure of this wine’s company – provided the winery agreed to release it! – it will no doubt improve for at least two decades.

Description
In the Ribeauvillé region of Alsace, the Trimbach family has been refining a vision for more than 13 generations: pure, long-lived wines without artifice. In certain extraordinary years, when the weather permits and nature cooperates, Trimbach Alsace Pinot Gris Sélection De Grains Nobles is born, a rarity obtained from grapes marked by the noble rot, botrytis cinerea. This is not just any vintage: the bunches are picked by hand, one by one, selecting only the most concentrated, wilted, almost translucent berries. Pinot Gris, with its thin skin and sensitivity to the environment, responds like few others to these Alsatian soils rich in limestone and to a cool, dry climate, protected by the Vosges, which delays ripening and allows botrytis to act slowly, without rotting but rather ennobling.
Winemaking
The grapes, once harvested, are gently pressed and the must ferments in stainless steel, without malolactic fermentation, in order to preserve the natural acidity and the finest aromas. No oak: Trimbach Alsace Pinot Gris Sélection De Grains Nobles is bottled in the spring, aiming for a crisp, precise profile. This cuvée is only produced in exceptional vintages, when the natural concentration exceeds the demanding requirements of the Alsace SGN. Its sweetness, far from being cloying, is balanced by structure and vibrant acidity.
Taste
Deep golden colour with amber highlights. Hypnotic complexity on the nose: orange peel, ripe mango, dried apricot, honey, white truffle and a light spicy background. On the palate, Trimbach Alsace Pinot Gris Sélection De Grains Nobles is voluptuous yet controlled, with an unctuous texture and persistent freshness. The acidity awakens the palate, cleanses the sweetness and lengthens the finish with echoes of candied fruit, toasted nuts and brioche. There is depth, but also nerve. It is not just a dessert wine: it goes well with foie gras, blue cheeses or spicy cuisine. A serious SGN, for ageing, where sweetness becomes architecture and the nobility of the rottenness becomes liquid art.
