Offering up aromas of sweet raspberries and berries, the 2021 Bourgogne Passetoutgrain A Minima is medium-bodied, supple and tangy, with powdery tannins and a bright, mouthwatering finish. This Gamay-Pinot Noir blend had just been racked to tank when I tasted it.

Description
Minima Rouge was not conceived as a simple, light Burgundy red wine, but as a statement of principle. At Domaine Trapet, in Gevrey Chambertin, this wine stems from a deeply Burgundian conviction: to intervene less in order to listen more closely to the vineyard. Its name reflects this philosophy of minimal intervention, taken here to a bold and uncompromising extreme: producing the wine without added sulphur during vinification, allowing the grapes and the terroir to express themselves with as little interference as possible. It comes from the Grands Champs plot, adjacent to the Gevrey Chambertin AOC, where Gamay and Pinot Noir coexist in a blend that is as unusual as it is deeply harmonious. The vineyard is cultivated using biodynamic methods, with extreme attention to natural balance, so that the wine’s purity is not merely for show, but the direct result of precise and demanding work. In this corner of Burgundy, with its continental climate and millennia-old tradition, the blend takes on a meaning of its own: freshness, vigour and an identity free from artifice.
Winemaking
At Trapet A Minima Rouge, the winemaking process follows the same principle of absolute respect for the raw material. The grapes are harvested by hand, with careful selection of the bunches, and the winery operates using gravity flow to avoid aggressive handling. Once in the vats, the grapes ferment naturally, without added sulphur, in a quest for transparency and authenticity rather than technical control. Everything at Trapet A Minima Rouge seems geared towards complementing the wine, not taming it. Rather than a vinification aimed at creating a specific effect, there is a desire here for simplicity, to reveal the texture of the fruit, the energy of the must and the character of the soil.

On the nose, Trapet A Minima Rougereveals a vibrant, juicy candour: red cherry, redcurrant, blackberry and a hint of elderberry, all interwoven with a stony note and a subtle pepperiness that lends it tension. On the palate, it is agile and medium-bodied, with subtle tannins and a lively acidity that sharpens it without making it harsh. The fruit is fresh, crisp and precise, always underpinned by a sense of delicious purity. It seeks not weight, but fluidity, energy and authenticity. The finish leaves a hint of spice, sap and an earthy echo that underlines its lively and sincere character.
