Description
The history of Faiveley Puligny-Montrachet and is the reflection of a vision passed down through seven generations, where respect for the Burgundian terroir and Chardonnay is almost an act of faith. Since 1825, the Faiveley family has cultivated an intimate bond with the land, and it was a recent decision - to replant a plot in Puligny with organic farming in 2014 - that marked a new chapter: to produce a more taut, pure and mineral wine, true to the rocky character of this celebrated appellation nestled between Meursault and Chassagne Montrachet. Here, on white limestone soils with south-eastern exposure, the Chardonnay expresses itself with millimetric precision, without unnecessary ornamentation.
Winemaking
The vinification of Faiveley Puligny Montrachet begins with a gentle pressing by pneumatic press to preserve the purity of the fruit. The must is carefully decanted before fermenting for four weeks in French oak barrels, less than a third of which are new, to avoid excessive oak influence. The wine then ages for 14 months on its fine lees, with regular bâtonnage, which adds volume, texture and complexity without sacrificing tension or freshness. The bottling of Faiveley Puligny Montrachet is carried out with minimal intervention, preserving the clarity and authenticity of its mineral expression.
Taste
Faiveley Puligny Montrachet offers an elegant and precise nose: notes of ripe citrus fruits - lime, pink grapefruit, candied lemon - intertwine with yellow apple, acacia blossom and a chalky minerality reminiscent of flint. On the palate, it is direct, slender, with a cutting acidity that lengthens the wine on the palate. The texture is creamy but restrained, without excess fat or sweetness. There are subtle echoes of well-integrated oak: faint vanilla, toasted brioche, barely melted butter. The finish is long, saline, with notes of chalk, lemon peel and a very fine herbal memory (fennel, white mustard flower).
It is a Chardonnay without make-up, pure, serious, for palates that seek the essence of the place. Ideal with white fish, scallops or poultry dishes with light sauces. A wine that does not seek to dazzle, but to remain engraved by its accuracy and elegance without boasting.
