Description
In Chavignol, that handful of hillsides northwest of Sancerre that many treat as an unofficial "cru", Sauvignon Blanc does not disguise itself as tropical nor does it seek easy plaudits: here it learns to speak in stone and light. Domaine Delaporte understood this a long time ago and took a brave decision: not to make up the variety, but to let the mosaic of 30 plots compose the melody. Vines 35 years old on average, worked without herbicides, insecticides or fertilisers, with reasoned viticulture and an almost obstinate attention to the balance of the vineyard.
Domaine Delaporte Sancerre Chavignol Blanc comes from clay-limestone soils, slopes with great sunshine and privileged exposures (mostly south/southeast), where the ripeness comes clean, but freshness is the key. This is the Sancerre identity in purist mode: tension, salinity and minerality that is not negotiable.
Winemaking
At Domaine Delaporte Sancerre Chavignol Blanc, the grapes are harvested by hand in 12 kg crates so that the grapes arrive intact. Hydraulic presses are used for delicate pressing, aiming for aromatic purity and precision. The must ferments in thermo-regulated stainless steel tanks during October and November, preserving the identity of the Sauvignon Blanc from Sancerre. The wine then rests on fine lees ~6 months, gaining texture and energy without losing its edge. After racking, fining and light filtration, it is bottled in spring to capture freshness and fine evolution.
Taste
In Domaine Delaporte Sancerre Chavignol Blanc, the colour is pale gold with greenish reflections. Straight and mineral nose: lemon, lime peel, crisp white fruit and an elegant herbal trace (boxwood, fresh herbs), with hints of rhubarb and blackcurrant; the exotic fruit, if it appears, does so in a whisper. The entry can show a very fine, sparkling, light carbonation.
The palate is full but sharp : precise citrus, lees that round without fattening, and a long, dry, flinty, saline finish that cleanses the palate. A French white wine with a mineral and fresh profile, perfect for seafood, goat cheese and grilled fish: a direct, serious and addictively vibrant Sancerre de Chavignol.
