Description
COS Contrada is a flagship Sicilian wine produced by Azienda Agricola COS, a pioneering project in the Vittoria region of Sicily. Founded in 1980, COS has gained recognition for its biodynamic approach and respect for local traditions. This wine is made exclusively from the indigenous Nero d'Avola grape variety, sourced from old vines over 80 years old. The vineyards are located on clay and limestone soils, which favours excellent water retention and brings a remarkable minerality to the wine's profile. The grapes are grown under the principles of biodynamic agriculture, minimising the use of chemicals and maximising the expression of the terroir.
Winemaking
The winemaking process for COS Contrada is artisanal and respectful of tradition. The grapes are harvested by hand and fermentation occurs spontaneously withindigenous yeasts. The wine is then aged for two years in Slovenian oak barrels, a method that allows the wine to acquire complexity and elegance without losing its freshness. The combination of cement fermentation and oak ageing ensures a balance between fruit purity and structure.
Taste
On the nose, COS Contrada shows an intense fragrance of ripe cherry, plums, red flowers and sweet spices such as liquorice and pepper. The aromatic profile is complemented by mineral and earthy notes that add a layer of depth. On the palate, it is juicy and vibrant, with refined tannins and a perfectly balanced acidity that provides freshness. The palate is elegant and structured, with a long, lingering finish dominated by ripe black fruit flavours, damp earth and hints of spice that reflect the character of the soil.
COS Contrada is ideal with red meats, stews, game dishes and cured cheeses. Its structure and complexity make it suitable for long ageing, but it is also pleasant to enjoy in its youth, when you are looking for a wine with freshness and character.
