Today, Tomás Postigo has managed to consolidate itself as one of the references in Ribera del Duero, with a careful production and wines that reflect the personality of their terroir.
Vineyards
Tomás Postigo 's vineyards are spread over different plots in Ribera del Duero. Part of the grapes come from its own 23 hectares of vineyards and from approximately 100 hectares controlled by the winery through long-term agreements with winegrowers in the region. The soils in which these vines are located vary in composition, with a significant presence of acidic, pebble-rich soils, which contributes to the production of wines with great aroma and acidity. Most of these vineyards are located more than 900 metres above sea level, which allows for excellent grape ripening and favours the freshness and longevity of the wines.
The climate of the area is continental, with cold winters and hot summers, which combined with the altitude of the vineyards, creates an ideal environment for the cultivation of varieties such as tinto fino(tempranillo), cabernet sauvignon, merlot and malbec. These varieties combine to produce wines with great structure, balanced acidity and soft tannins.
For the white wine, the winery uses Verdejo grapes from old vineyards in the Nieva area of Segovia. These vines, planted in poor soils and with low yields, produce very aromatic wines, with vibrant acidity and perfect for long ageing.
Philosophy
The philosophy of the Tomás Postigo winery focuses on the constant search for excellence, respecting both the environment and traditional winemaking techniques. Since its beginnings, Tomás has sought to produce wines that faithfully represent the terroir from which they come, maintaining a close relationship with local winegrowers and meticulously controlling each stage of the production process.
Harvesting at Tomás Postigo is done by hand, selecting the grapes at their optimum point of ripeness. Each bunch is picked in 10 kg boxes to avoid crushing the grapes and preserve their integrity. Once in the winery, the grapes go through a cold chamber and then through a strict manual and automatic selection process, where any impurities or clusters that do not meet the winery's quality criteria are removed. One of the highlights of the winemaking process is that the winery works by gravity, which avoids the use of pumps and ensures that the grapes reach the tanks whole. This not only improves the quality of the must, but also prevents premature oxidation of the grapes, ensuring a longer-lived and more complex wine.
The fermentation process is carried out in stainless steel tanks, using indigenous yeasts to preserve the character of the grapes. This process, essential for winemaking, is what gives Tomás Postigo wines their unique personality and expression of terroir.
Ageing is another fundamental pillar in the production of Tomás Postigo wines. All red wines spend a minimum of 12 months in French oak barrels, carefully selected according to the type of vintage. This ageing gives complexity and structure to the wines, which evolve harmoniously in the bottle. In some cases, the winery opts for longer ageing, up to 36 months, for its most exclusive wines.
