Egly-Ouriet Grand Cru Millésime is an exceptional champagne that represents the pinnacle of viticulture in Champagne, France. This wine, a blend of 70% Pinot Noir and 30% Chardonnay, comes from the prestigious terroirs of Ambonnay in the Montagne de Reims. These vineyards are located in a south-southeast orientation and grow in a chalky loam soil, ideal conditions for these grape varieties.

Winemaking

Cultivation is done conventionally, and harvesting is done by hand in small crates, selecting only the grapes that have reached optimum ripeness in the sun. This careful selection is crucial to guarantee the quality of the wine.
Once harvested, the grapes undergo spontaneous, thermoregulated fermentation in stainless steel tanks. This process allows for precise temperature control, which is essential to preserve the delicate aromas and flavours of the grapes. The wine is then aged in oak barrels, which adds complexity and depth to the flavour profile.
The second fermentation in the bottle, which is crucial for Champagne production, is followed by 96 months of storage on the lees. This extended period of ageing on the lees contributes significantly to the complexity, texture and aromas of the champagne. Egly-Ouriet Grand Cru Millésime was disgorged with a final light dosage of only 1g/l, classifying it as extra-brut.
