Description
There are wines that tell stories. That enclose the passage of time in each sip, leaving their mark on the palate and in the memory. Oloroso Romate is one of them.
Born in the legendary Sánchez Romate Hnos. winery, founded in 1781, Oloroso Romate is the fruit of a tradition that has withstood centuries without losing its essence. Its protagonist is the Palomino grape, grown in the white albariza soils of Jerez. This soil, which seems to be drawn with chalk, acts like a sponge, trapping the winter humidity to release its freshness in the hottest months.
Winemaking
But what really makes Oloroso Romate special is its ageing process. First, it rests under the velo de flor, a layer of yeast that protects it from oxygen and gives it delicate, saline notes. Over the years, the flor disappears, and the wine enters a new phase: oxidative ageing, where air becomes its new ally, giving it depth, structure and that characteristic amber colour. The criaderas and soleras system does the rest, patiently blending different vintages until a perfect balance is achieved.
Taste
Imagine opening a wooden box containing aromatic treasures: hazelnuts, toasted almonds, a hint of caramel and a whisper of baked apple. This is the first encounter with Oloroso Romate.
On the palate, the experience is different. More intense. Dry, but full-bodied, with a subtle acidity that keeps everything in harmony. Each sip leaves a long, elegant aftertaste, with hints of dried fruits and a slight saline nuance that transports you to the Atlantic breeze.
Oloroso Romate is the ideal companion for dishes such as soups, mild stews and white meats. But, if you ask me, it is also perfect to drink on its own, unhurriedly, letting each sip tell its own story.
