Description
In Montilla Moriles, where the Cordoban sun ripens the Pedro Ximénez grapes to the point of exuberance, Toro Albalá has decided to do exactly the opposite: to cut back drastically. The idea for Toro Albalá Dos Claveles stems from an early—almost reckless—harvest to capture the grapes before the heat turns them sweet and heavy. They say at the winery that the first tastings seemed “too tense” for a region famous for its breadth; they pressed on regardless, because they wanted a dry white wine that smelled of Córdoba’s courtyards and fresh carnations, but that drank like a stroke of chalk: direct, dry, unadorned. Here, tradition is not broken: it is honed. Variety: Pedro Ximénez. Origin: Montilla Moriles, albariza soils and luminous limestone, intense summers and a historical know-how that, in this case, translates into precision.
Production
Toro Albalá Dos Claveles is made from 100% Pedro Ximénez harvested early (late July) to preserve freshness, acidity and low alcohol content. The grapes are processed quickly, handled with a clean touch and without fanfare: gentle pressing and fermentation in stainless steel tanks, so that the fruit and the structure take centre stage. The wine then rests for six months in stainless steel, without any distracting oak, until bottling. The result is a dry Andalusian white wine, fragrant and surprisingly serious for its lightness: around 12% ABV. Served chilled (6–8 °C) it becomes almost electric.
Flavour
Toro Albalá Dos Claveles boasts a pale straw colour, clean and with a morning glow. On the nose, it doesn’t shout: crisp apple and peach appear first, followed immediately by a citrus note (lemon, grapefruit) that tightens the profile. There is a hint of saltiness and, at times, a nuance that faintly recalls a fino: toasted nuts and hot stone.
On the palate, Toro Albalá Dos Claveles is where it earns its respect: a fresh attack, well-integrated acidity and a rounded mid-palate, with a very fine effervescence that lightens the wine and stimulates the salivary glands. It does not seek to put on a show with its fruit; the expression is restrained, precise and polished against a mineral backdrop, with a clean and discreetly pleasant finish that calls for another sip and something from the sea: anchovies, shellfish, grilled fish.
