The 2023 Sal da Terra is a special bottling for the importers of Zarate and Eulogio Pomares wines in the UK, Indigo Wines. It was produced with 60% grapes from Carballoso in Xil, Meaño, six kilometers from the sea at 250 meters above sea level. The vineyard was planted with 37-year-old vines on sandy granite soils; this part fermented in a 1,200-liter chestnut barrel. The remaining 40% of the volume was produced from the Francón vineyard, which also produces Eulogio's Pedraneira, and it fermented and matured in a 1,500-liter concrete vat. The blend of the two is very balanced and elegant, harmonious, clean and expressive, with some flavors reminiscent of those I found in Pedraneira. It has a fine-grained texture and finishes tasty and focused. It comes in at 13% alcohol.

Description
From the beginning there was no doubt: Sal da Terra was born from the shared memory of a dinner between three friends (Ben Henshaw, Jamie Goode and Daniel Primack) and the legendary Galician winemaker Eulogio Pomares, driven by the conviction to capture in bottle the saline essence of the Rías Baixas terroir. Thus the spark arose in 2017, and that same winter they travelled to the heart of Salnés, where Eulogio selected two plots whose contrasts would speak for themselves: the secret Carballoso, at 250 metres above sea level on sandy granite soils, and Francón, next to the estuary. From the beginning they opted for spontaneous fermentations and unconventional containers: Castaño and concrete. The name "Sal da Terra" ("salt of the earth") sums up their spirit well: a wine born from the sea, stone and a collective vision.
Winemaking
The grapes are harvested by hand with a selection of plots. Sixty percent of the grapes that make up Sal da Terra come from the Carballoso plot, planted 37 years ago, which ferments and ages for nine months in a 1,200-litre chestnut vat. The remaining 40% comes from Francón, fermented and aged in a 1,500-litre concrete vat. Ageing on the lees adds texture and complexity. Sal da Terra is bottled unfiltered, respecting the integrity of the Albariño and its purest expression of the Atlantic terroir.
Taste
From the first contact, Sal da Terra shows a restrained but profound nose. Notes of sea saltiness, coastal herbs, wet stone and a subtle background of tense citrus (lime, lemon peel) appear, with no fruity stridency. The palate is taut, straight and pure. The palate is juicy but dry, with an acidity reminiscent of the edge of the Atlantic wind. There is structure but also finesse: you can feel the weight of the wine without losing lightness. On the finish there are mineral notes, a persistent saline echo, and a vibrancy that aligns it with great European whites. Ideal for lovers of the most austere and mineral Albariño, this wine is a declaration of principles: no make-up, no concessions, pure Rías Baixas.
