Description
At Maison Joseph Drouhin, there is a quiet obsession: to listen to the place rather than impose a style. In Chablis, this idea has become almost an act of faith. In the 1960s, when many hillsides were forgotten, Robert Drouhin took a gamble to rebuild vineyards where others saw only the past. That decision - to plant and buy plots when Chablis was not yet "safe" - defines the character of the house: discreet courage, precision and respect. Joseph Drouhin Chablis 1er Cru Mont de Milieu is born of this balance between history and conviction, made from 100% Chardonnay. This Chablis Premier Cru, located on a hillside with a warmer and sunnier exposure than many neighbouring areas, tends to offer a white with an extra point of amplitude without losing the mineral column.
Under the vineyard Mandó the Kimmeridgian limestone (with marine fossils) rules: an oceanic memory that translates into wet stone, shell and chalk minerality, so typical of the Chablis AOC in Burgundy. The northern climate, with its freshness, maintains the tension, while the vineyard brings a hint of luminous maturity.
Winemaking
The Joseph Drouhin Chablis 1er Cru Mont de Milieu is harvested by hand in crates, with meticulous selection. In the cellar, the philosophy is surgical: slow pressing of whole bunches in a pneumatic press; the final pressing must is separated from the tear must to preserve purity. After a brief racking, fermentation and ageing are carried out in stainless steel tanks, in order to achieve aromatic precision and a clear reading of the terroir. Ageing lasts 8-10 months before bottling, with decisions guided by tasting.
Taste
Joseph Drouhin Chablis 1er Cru Mont de Milieu is not a made-up Chardonnay: it is a Chablis1er Cru white wine with nerve. The nose opens with citrus (lemon and lime), green apple and a trace offlint/wet chalk which becomes more evident with air. The palate is broad and rounded, but the acidity cleans the palate like a scalpel: citrus and stone fruit (subtle peach), a creamy touch more texture than oak, and a salinity that makes you salivate. The finish is long, chalky, with the sensation of white stone and a serious, gastronomic persistence: ideal for shellfish, oysters and grilled fish.
