Description

At Champagne Jacquesson, the Chiquet family made an uncomfortable decision for the region: their main cuvée should no longer be an immutable standard, but rather count the year as it comes, with its virtues and its edges. Thus was born the Cuvée 700 series, where each number reveals the heart of the base vintage, refined with reserve wines. In Jacquesson Cuvée 748, the backbone is 2020, with fruit from the Grande Vallée de la Marne (Aÿ, Dizy, Hautvillers, Champillon) and the Côte des Blancs (Avize, Oiry): a dialogue between amplitude and chalky tension. Here, Chardonnay, Pinot Noir and Meunier coexist, but the Chardonnay is the dominant feature of the whole.

Winemaking

In Jacquesson Cuvée 748, the grapes are harvested early and precisely, looking for ripe grapes but with nerve. The house works with respectful viticulture, managing soils to express the diversity of plots. Vinification and ageing are done in large wooden vats on lees, without fining or filtration, favouring texture and depth over cosmetics. Before disgorging, the wine rests for around 42-48 months on its lees; the finish is extra brut with a dosage of 2 g/L, a figure that barely rounds off the angles without sweetening the message.

Taste

Jacquesson Cuvée 748 is not a Champagne of loud fruit: it is minerality, precision and a dry elegance that opens with air. On the nose, grapefruit citrus, fine brioche-like bakery, a touch of ginger and saline nuts; underneath, ripe pear, crushed flowers and a mint/chamomile breeze that refreshes the whole. The palate enters with very fine, "tight" bubbles, bright acidity and structure: more athletic than voluptuous, but full-bodied. The finish is long, spicy and chalky, leaving a sensation of pure, gastronomic extra brut Champagne, ideal for seafood, oily fish or even Japanese cuisine.
