Crafted from vines planted in Aÿ, Dizy, Hautvillers and Champillon (59%) and 41% in Avize and Oiry, the NV Extra-Brut Cuvée No. 742 Dégorgement Tardif, matured for 96 months on the lees under cork, reveals a subtle, complex bouquet of exotic fruits, honey, beeswax, ripe orchard fruits, chamomile and herbs. Medium to full-bodied, sappy and textured, it has a vinous, fleshy core of fruit, racy acids and a saline, delicate mid-palate, leading to a long, mineral and ethereal finish. Disgorged in April 2023 with 0.5 grams per liter dosage. This is a Champagne for gastronomy.

Description

At Jacquesson, the idea of numbered cuvées was born as a small revolution: to stop treating non-vintage Champagne as a fixed style and turn it into an annual portrait, faithful to its parcels. Jacquesson Cuvée 742 Dégorgement Tardif is 2014 interpreted with that ethic of precision: 59% comes from Aÿ, Dizy, Hautvillers and Champillon, and 41% from Avize and Oiry, two worlds that complement each other like muscle and skeleton: the broader, more vinous side versus the chalk that tightens the contour. 2014 was a year of contrasts - mild and wet winter, warm spring, cool and very rainy summer - until a dry, warm and bright September brought the grapes to a precious balance. The courageous decision comes later: when the wine "asks for it", Jacquesson keeps it with extreme patience, betting on time as an ingredient.

Winemaking

In Jacquesson Cuvée 742 Dégorgement Tardif, the viticulture is careful, oriented to express the diversity of the plots. Vinification and ageing are done in large wooden vats, on lees, without filtration or fining, seeking texture without make-up. Then a second fermentation in the bottle and the seal of the dégorgement tardif: 96 months on the lees with cork closure, before disgorgement. Very limited production(17,980 bottles / 900 magnums), disgorged in April 2023 and a minimum dosage of 0.5 g/L: extra brut in its clearest form.

Taste

There is no strident fruit in Jacquesson Cuvée 742 Dégorgement Tardif: it is a champagne of stone, tension and vinosity. The bubbles are very fine; at first the citrus (lemon, white grapefruit), restrained apple and a hint of white flower are in command. With air, subtle toasted bread, dried fruits and a delicate spice appear. Dry and straightforward on the palate, with an acidity that does not prick: it sculpts. The centre is ample, almost "chewy", and then comes that chalky salinity that makes you salivate and lengthens the drink. Long, serious finish, with bitter citrus, walnut and wet chalk. A gastronomic Champagne, for fine seafood and noble fish... or for those who enjoy elegant austerity.
