Description

In Montgueux, a forgotten hillside on the outskirts of Troyes, Emmanuel Lassaigne has transformed the improbable into the grandiose. Heir to a small family vineyard, he took the reins in the 1990s with a vision radically opposed to the logic of the big maisons: vinify each parcel separately, bottle without dosage, and respect the character of each vintage, without filtering or sweetening what the land delivers. While others only label exceptional years as "Millésime", Emmanuel chooses to do so every year, convinced that the soul of the place reveals itself in the light as well as in the shade. Sometimes, he confesses, the wines that were the least promising in his youth become - years later - the ones that excite him the most. It is an act of faith, and also of listening.

Jacques Lassaigne Millésime Blanc de Blancs Brut Nature is made exclusively from Chardonnay grown on soils rich in clay and chalk, with vines over 40 years old, pruned in Guyot and with moderate yields (60 hl/ha). The slopes of Montgueux, with their orientation and particular microclimate, give the wine a tense and deeply mineral character. There are no shortcuts here: just patience, intuition and the decision to let the terroir speak.

Winemaking

The must that gives life to Jacques Lassaigne Millésime Blanc de Blancs Brut Nature ferments slowly in stainless steel tanks for about eight months, without the addition of yeast. Each plot is vinified separately to preserve its identity, and the final blend - always a blend of 2 or 3 plots, varying according to the vintage - seeks to capture the unrepeatable essence of the year. After fermentation, the wine is bottled and remains in contact with its lees for eight years, developing depth and complexity in complete stillness. No expedition liqueur is added: it is a Brut Nature without masks, revealing the strength of the soil and the nobility of time.

Taste

On the nose, Jacques Lassaigne Millésime Blanc de Blancs Brut Nature displays an austere, almost ascetic elegance. Notes of lemon peel, green apple, raw almond and wet chalk appear, with a depth that only long ageing on lees can confer. In the mouth it is incisive, vertical, with a cutting purity. The bubbles are very fine, integrated like a tense caress. Citrus melts with hints of dried brioche, white flower, walnut and a salinity reminiscent of broken shells on the sand. The acidity is vibrant but not aggressive; it supports the wine like an invisible axis. Persistent, delicate and brutally sincere, this Champagne does not seek to please, but to move.
