Description
One afternoon in Montgueux, Emmanuel Lassaigne was strolling through his family's old Chardonnay plots - offshoots steeped in history, rooted in chalky, chalk-rich soils -when the idea of creating Jacques Lassaigne Réserve Extra Brut was born. Inspired by the purity of the terroir and a philosophy of organic viticulture and minimal intervention, he decided to make an uncompromising Champagne: 100% Chardonnay, fermented with indigenous yeasts and without filtration. He opted for a crystalline expression of the terroir, with a minimal dosage that allows the mineral soul of Montgueux to emerge. It is said that one year he left a batch to ferment in an old barrel out of pure intuition; on tasting it, silence reigned in the cellar, captivated by its stony freshness. Jacques Lassaigne Réserve Extra Brut is a blend of different plots, each adding complexity and balance to this signature Champagne.
Winemaking
Harvesting is manual and delicate; the grapes that will give life to Jacques Lassaigne Réserve Extra Brut arrive by gravity to the press, preserving their integrity. Fermentation takes place spontaneously in used barrels, with indigenous yeasts and without the addition of sulphites except for the essential. The wine rests on the lees for a long period, sometimes up to 48 months, gaining depth and texture. Disgorgement is carried out with little or no dosage, maintaining a pure vivacity. The final bottling reflects a transparent philosophy: no filtration or artifice, just wine and bubbles.
Taste
