Description

Itsasmendi was born out of an idea that was almost provocative for its region: to demonstrate that Bizkaia’s Txakoli need not be limited to light freshness and immediate drinking, but could also offer depth, structure and ageing potential. The winery has been pursuing precisely this aim since 2003, crafting a white wine of serious ambition from a selection of plots cultivated with meticulous attention to the vineyard. Set in the heart of the Atlantic landscape of Bizkaiko Txakolina, with its humidity, Cantabrian breezes and that cool vitality that runs through the entire region, Itsasmendi 7 sought to go a step beyond the classic interpretation and create a wine with greater depth, more body and a stronger aptitude for the table. That decision alone clearly defines the character of the project: here, the aim is not to please, but to forge an identity.

Winemaking

Itsasmendi 7 is not conceived as an easy-drinking white, but as a wine with structure. It is made from a selection of grapes from different plots, chosen using precision viticulture techniques to achieve a more serious and gastronomic profile. The wine is then left to rest on its lees for several months in stainless steel tanks. This ageing process is not intended to mask the wine’s origins, but rather to give it greater breadth, more texture and a more enveloping mouthfeel, whilst keeping its Atlantic edge intact. The stainless steel preserves the tension and purity, whilst the work on the lees adds depth and a creamier sensation in the centre of the palate.

Flavour

In the glass, Itsasmendi 7 does not play the exuberance card. At first it appears reserved, briny, fresh, almost austere, and then opens up with grapefruit, quince, ripe white fruit, balsamic herbs, a hint of aniseed and a very subtle spicy undertone. Nothing tropical or loud. On the palate, it gets serious: it has volume and a full-bodied texture, but the acidity takes the lead from start to finish. There is citrus vigour, mineral tension and an Atlantic energy that runs through the entire wine. The finish is long, flavourful, slightly bitter in the best sense, with hints of fresh grass, noble citrus and damp rock. A gastronomic Txakoli with character—vertical, briny and deeply gastronomic.
