Description
Giboulot Bourgogne Blanc is an exceptional white wine from the prestigious region of Burgundy, France, produced in the A.O.C. Beaune appellation, in the Côte d'Or. This wine is composed entirely of the Chardonnay variety, grapes coming from vineyards planted in 1991 in clay-limestone soils, which gives it a distinctive minerality. The vineyards are located in the commune of Pommard, with a western exposure, which allows for excellent ripening of the grapes. Harvesting is done by hand, ensuring that only grapes at their optimum point are harvested.
Winemaking
The vinification process is meticulous: whole grapes are gently pressed to preserve their characteristics, followed by spontaneous fermentation with indigenous yeasts in old oak barrels, avoiding the use of new oak to maintain the purity of the wine. The wine is then aged for 11 to 12 months in contact with its lees, adding depth and complexity to the final profile. This biodynamic approach reflects the commitment of the producer, Emmanuel Giboulot, to sustainable and environmentally friendly agricultural practices.
Taste
Giboulot Bourgogne Blanc stands out for its refined aromatic expression and balance on the palate. The nose is fresh and delicate, with predominant notes of green apples, ripe pears and subtle hints of citrus fruits such as lemon. Herbal nuances are also perceived, such as lemon verbena, which add freshness to the whole.
