Winemaking
Fermented with indigenous yeasts and ageing under a film of yeasts (velo de flor) for 15 months in oak foudres. Bottled unfined, unfiltered and with no added sulphites.
Description
Jean Marc Dreyer doesn't make wine: he interprets it. In the middle of Alsace, in the limestone lands east of the Vosges, he decided to revive a forgotten word - Argitis, the old name for Riesling - as a tribute to tradition, but also as a statement of intent. Ever since he embraced biodynamics, his obsession has been purity: to let the soil, the dry, cold climate and the unfiltered grapes speak. Dreyer Argitis Riesling is born of this radical philosophy. It is a plot wine, direct, uncompromising, that dares controlled oxidative ageing, something rare in Riesling. The inspiration came during the harvest, when he noticed how the must resisted oxygen: he decided not to fill the foudres and to let a natural yeast veil protect the wine, as in the Jura or Jerez. Calculated risk, brilliant result.
Winemaking
The grapes for Dreyer Argitis Riesling are harvested by hand, directly pressed and the must ferments spontaneously in old vats. During 24 months of ageing, Dreyer does not rack or refill the barrels, allowing a slow oxidative development under a veil of flor. This process gives structure, tension and a unique character. The wine is neither filtered nor clarified, and receives no additives: it is a living wine, intact, with all its energy intact.
Taste
In the glass, Dreyer Argitis Riesling is pale golden with amber highlights. The nose is complex and austere: dried citrus, quince, baked apple, candied lemon peel and a delicate background of green walnut. The palate is vibrant, with an electric acidity that cuts through the palate. There are notes of lime, sour apple, almond and a mineral salinity reminiscent of wet chalk. The finish is very long, dry, with a subtly oxidative echo and lingering freshness. A Riesling for those seeking depth, character and a raw expression of the Alsatian terroir. Ideal with spicy cuisine or umami dishes.
