I tasted again the 2020 Les Voranes, which I had already tasted last year, a wine produced with grapes from two vineyards in Can Rosell de la Serra, Torrelavit (Alt Penedès) planted with Xarel·lo and Macabeo (only 2% in the wine). It fermented with indigenous yeasts and refermented with must from the same vineyard. This wine spent 49 months (last year it was 40) with the lees in bottle, closed by a cork before it was disgorged. It was a very challenging year, and the wine only has 10.5% alcohol and a pH of 3.26. It's clean and bright and has gained in definition and precision. There is a subtle note of marzipan, and it's more elegant and subtler, very fresh and balanced. 7,374 bottles produced. I tasted a bottle disgorged in November 2024. The 2021 will not be released until 2026.

Description
Since Ton Mata -renowned for his work at Recaredo and president of Corpinnat- decided to create Bufadors together with his partner Encarna Castillo, the project was born with a conviction: to let the wine speak from the roots, without make-up. In the area of Can Rossell de la Serra (Torrelavit, Alt Penedès), they organically and biodynamically cultivate an old vineyard of Xarel.lo (98%) and Macabeo (2%), planted on calcareous soils. Here the altitude and the cool Mediterranean climate mould a grape with firm acidity and mineral character. The result: Bufadors Les Voranes Brut Nature, a sparkling wine that shuns convention, without concessions to sweetness or artifice.
Elaboration
Bufadors Les Voranes Brut Nature is made following the traditional method, but with a radical artisanal approach. After a spontaneous fermentation with indigenous yeasts, the wine undergoes a second fermentation in the bottle with fresh must from the same vineyard. The natural cork stopper during ageing is a rarity even at Corpinnat, and disgorging is done by hand, without freezing. The wine remains 49 months on its lees, gaining definition and precision. No expedition liqueur or sulphur dioxide is added, and the wine is neither fined nor stabilised: a natural, unadulterated, lively wine.
Taste
To the eye, Bufadors Les Voranes Brut Nature is straw yellow with golden highlights. The nose is sober but expressive: grapefruit, lemon peel, green apple and a delicate echo of marzipan. With air, saline and sourdough bread notes emerge. On the palate, it is sharp, electric, with fine bubbles and a sharp acidity that lengthens the wine and makes it vibrant. The finish is dry, mineral, with tension and a lingering citrus background. With only 10.5% alcohol, it moves between lightness and complexity, ideal for pairing with oysters , sashimi or seafood rice dishes. A Corpinnat sparkling wine with a free soul that speaks of landscape, time and conviction.
