The 2019 Mirabrás is a white wine first produced in 2014 and now in its fifth vintage, as they skipped 2015. It's a white from one vineyard, Cerro de Leyes, a slope planted in 1972, and was part of an experiment with white wines; this one used grapes that had been dried by the sun for one or two days and was matured in a Manzanilla cask with flor (18 months in cask, not all the time with flor). The evolution of these wines is the new wave without flor or barrel. 2019 was a very austere year for the long term, with very good wines with lots of everything, including herbal aromas and hints of nuts, yeasts and pollen. It has vinosity, a strong personality and a salty character, but at the same time, it's easy to drink. It has 15% natural alcohol and a pH of 3.3. There were 5,000 bottles filled in March 2021. This will grow in bottle, as I observed when tasting the 2016 next to it.

Description
Barbadillo's Mirabrás wine is a white wine made with Palomino fino grapes from old vines. Its particularity is that it is produced using ancient techniques of fermentation in sherry butts, but without alcoholic fermentation, just like the manzanilla variety of wines.
It is a wine whose unequalled flavour has positioned it as one of the best of this winery. This is a product of its biological ageing and the selection of its vines under unique quality terms, thus achieving a very singular taste and texture.
Therefore, many tasters define it as an apple-coloured wine, but with elements that classify it as atypical, expressive, deep and unique.
Winemaking
Barbadillo Mirabras wine is made from 100% Palomino fino grapes, but with old vines, cultivated on albariza. After the traditional harvest, which guarantees the freshness of the fruit, it is fermented in sherry butts, just as this winery used to do years ago.
It is then transferred to oak casks and stainless steel barrels, which determines its particular flavour. It is aged for 14 months, ensuring direct contact with its lees, which promotes the development of a fine veil of flor.
Taste
Barbadillo's Mirabrás wine has a pale golden colour, with aromas of flowers, fruits and a touch of spices. It is a wine that is defined in the mouth as easy to drink, as well as being juicy, it has a fresh finish.

Its organic ageing and the ancient fermentation of this winery give rise to a wine described as atypical, due to its incomparable flavour capable of taking your mind back to the most rudimentary production techniques.
