The very young white 2023 Ás de Mirabrás is their entry point to the style, through a selection of old vines on albariza soils in Cerro Pelado, Macharnudo Bajo and Burujena. It was produced in a traditional way, fermenting in stainless steel with local yeasts selected by the winery and matured in bottle. This was first produced in 2019, selecting old vines from different Pagos, harvest them when ripe and after a few months blended, looking for purity, no interference or makeup, varietal in search of simplicity and minerality. It has 13% alcohol and a pH of 3.3. Despite feeling quite neutral when young and austere, the wine has an unexpected evolution in bottle and develops notes of diesel. Straightforward and fresh. 14,000 bottles produced. It was bottled in April 2024.

Barbadillo Ás de Mirabrás is a white wine produced by Bodegas Barbadillo that seeks to expose the maximum expression of the Palomino variety. This wine comes from old vines grown in albariza soils in the region of Cádiz, specifically in the historic estates of Miraflores, Añina, Macharnudo, Campix and Santa Lucía. Its production is limited, with only 20,000 bottles bottled annually.

Winemaking

The elaboration process for Barbadillo Ás de Mirabrás includes the fermentation of the must in stainless steel tanks, where the wine rests after the harvest for a natural clarification. It does not pass through barrels, thus maintaining the freshness and pure character of the grapes. With an alcohol content of 13% and a pH of 3.25, this wine reflects its southern origin, where climatic conditions and white soils influence its profile.

Taste

Barbadillo Ás de Mirabrás offers a complex flavour, with a fresh and well-defined structure. On the palate, it stands out for its ripe fruit notes, such as peach, accompanied by nuances of dried herbs and flowers such as pollen. Its texture is smooth, slightly honeyed, providing a balance between acidity and unctuousness. This wine is surprising for its saline character, probably due to the proximity of the vineyards to the sea, which gives it a long, pleasant finish.
