Description
Albamar Ancestral is a sparkling wine made exclusively with the Albariño variety (100%) from the Salnés Valley, in the Rías Baixas region of Galicia. This wine is the result of the work of the Albamar winery, a family business founded more than 25 years ago and currently run by Xurxo Alba Padín, who has promoted a respectful and non-interventionist viticulture. The vineyards are located at the mouth of the Umia River and are located in sandy soils of granitic origin, rich in minerals that give complexity and freshness to the grapes.
Winemaking
The production of Albamar Ancestral follows the ancestral fermentation method, in which the wine is bottled at an advanced stage of density (around 1.004 to 1.006) to finish fermentation inside the bottle. This natural process uses the grapes' own indigenous yeasts, without the addition of external products, which allows the varietal typicity of the Albariño to be preserved to the maximum. The wine remains in contact with its lees for about 7-8 months, achieving a creamy texture and providing bakery notes. Subsequently, the bottles are disgorged without the addition of expedition liqueur or sulphites, in a limited production of around 3,200 to 4,000 bottles per year.
Taste
Albamar Ancestral has a straw yellow colour with golden highlights and fine, persistent bubbles. On the nose, it displays aromas of yellow and white fruit, such as peach and apple, along with notes of yeast and pastries over a mineral background that evokes the salinity of the Atlantic. On the palate, it is dry and fresh, with a balanced acidity that brings vitality and an enveloping, creamy character. Citrus flavours are perceived, mainly grapefruit and lemon, as well as stone fruit. Its fine carbonation is perfectly integrated, giving it a delicate, light texture. It finishes with a subtle bitterness and a floral finish, leaving a long and refreshing persistence.
This wine is ideal for pairing with seafood dishes, oysters, sushi, seafood rice dishes and soft cheeses, highlighting its versatile and refreshing character.
