Jérôme Lambert has always been passionate about grapes. When he was a child, he would go to pick them to tread them and wait a few days for them to ferment. He started small, and as he didn't understand the issue of chemicals, nor did he know that the soil was damaged, he did a small test that turned out to be completely natural and organic. Today he cultivates about four hectares of vineyards south of Angers, in Champs-sur-Layon, Anjou (Loire).Lambert grows Chenin Blanc on a plot of low-yielding vines up to 50 years old planted on schist. He also grows some Grolleau and Cabernet Franc planted on sandy soils. He comes to offer an indisputable taste of this great terroir, as he sometimes makes several vintages at different stages of fruit ripening. They are juicy and lively wines. They have a very unique vibrant perfume that represents this land. In the end, you don't need much more than good, healthy fruit.

His wines are deep and mineral. They are made from spontaneous alcoholic fermentation with indigenous yeasts. Ageing on lees in fibre tanks. Bottled unclarified, unfiltered and without added sulphites. You may, from time to time, keep the wine unbottled, and this is purely and exclusively due to the philosophy you have unwittingly chosen: to do so only when the wine is really ready.
