Domaine Jean Marc Boillot is one of Burgundy top quality wineries, producing excellent Chardonnay white wines and Pinot Noir red wines, in a wide range of communal wines. J.M. Boillot products are much appraised by true Burgundy wine lovers, being present at the best restaurants in Paris.
Jean-Marc belongs to the extended Boillot family; his cousins produce wine at Gevrey-Chambertin and Chambolle-Musigny, his brother Henri, is also wine-maker in Volnay and at the same time he is Étienne Sauzet grandson and brother-in-law of Gérard-Boudot, co-owner of Domaine Étienne Sauzet, one of the main producers at Puligny-Montrachet. As a matter of fact, some Étienne Sauzet plots were inherited by Jean-Marc Boillot.
Because of the rows with his father, Jean-Marc Boillot left the family winery and moved to Maison Olivier Leflaive as oenologist. In 1985 he decided to start business on his own and in 1989 he inherited his grandfather Pinot Noir lands. Two years later, he becomes the only owner of grandmother Sauzet's vineyards, which were shared with his brother-in-low in Puligny-Montrachet.
Nowadays J.M. Boillot has 11 hectares distributed around Côte de Beaune (Puligny, Chassagne, Meursault Pommard, Volnay and Beaune) that include all the plots inherited from Domaine Sauzet, in Puligny-Montrachet. Land is cultivated consciously, with an attitude close to biodynamic; subsoil is ploughed five to seven times a year and they refuse to use chemical herbicides. The cellar keeps white wines ageing for 11 months in casks with regular bâtonnage. New barrels are used in a 20-25% average in order not to get wines too much marked with wood flavours.
Jean Marc Boillot wines are: Bâtard-Montrachet; Beaune Premier Cru Rouge et Blanc “Les Montrevenots”; Pommard Premier Cru “Les Rugiens”, “Les Saussilles” and “Les Jarolières”; Volnay Premier Cru “Les Pitures”, “Carelle sous La Chapelle” and “Ronceret”; Puligny-Montrachet Premier Cru “La Garenne ”, “La Truffière”, “Les Referts”, “Le Champ Canet” and “Les Combettes”; Pommard; Volnay; Meursault; Puligny-Montrachet; Chassagne-Montrachet.
