The unfortified white 2023 Socaire was produced with Palomino from 60-year-old vines on white marl/limestone soils (blanco de albariza), and it expresses the variety and soils. It fermented with indigenous yeasts in old barrels that had contained Fino before; so it has the flor yeasts' influence, especially after spending 24 months in those casks. It has a pale golden color, textbook esparto grass and yeasty notes, a chalky texture and a sapid finish, with some lightness. It comes in at 12.5% alcohol, with a pH of 3.3 and 5.3 grams of acidity. It's certified organic. 7,000 bottles produced. It was bottled in August 2025.
