The Disznókő winery is located in the Tokaj wine region, in the village of Mezőzombor, within the Mád - Mezőzombor appellation. Its name, which means "boar's stone", comes from a large volcanic rock located in the heart of the vineyard or, according to some geographers, from the shape of the hill where the vineyards are planted.
The first written mention of the Disznókő vineyard dates back to 1413. Since AXA Millésimes acquired the property in 1992, the estate has grouped a number of contiguous historic vineyards around the winery. These vineyards, which were owned by aristocratic families for centuries, are renowned for their exceptional terroirs that produce high quality wines. Thanks to its experience and expertise, today Disznókő is recognised as a leader in reinventing the great wines of Tokaj.Vineyards
The Disznókő vineyard covers 112 hectares of vines on a total of 150 hectares. It is one of the few vineyards in Tokaj that is located on a single plot of land. This feature allows for daily contact with the vineyard and great responsiveness. The vineyards are situated between 135 and 220 metres above sea level, on sunny slopes facing mainly south, south-west and south-east. They are protected from cold winter winds and summer storms by the Zemplén mountains to the north. The soil is diverse depending on location and altitude, but mostly clayey soils overlying rhyolite and rhyolitic tuff, a mineral-rich volcanic rock. These soils have a high water-holding capacity and heat up easily, radiating heat to the vines. The rich mineral content of the volcanic soil adds a unique "fire" to Disznókő wines.
Philosophy
Disznókő 's philosophy focuses on the pursuit of absolute purity of fruit, freshness and balance combined with the power and depth of botrytised grapes. Harvesting is highly selective and is carried out entirely by hand. Different stages of maturation take place which will give rise to different styles of wine. The vinification of Aszú is unique and complex, from the storage of the Aszú grapes to the extraction of every drop of Eszencia, an elixir produced from these grapes. The maceration of the Aszú grapes takes place in the fermentation phase or with the new wine for 12 to 60 hours to extract the sugars, flavours and acids. The Aszú wines are then aged for about two years in oak barrels in the depths of their cellars. Finally, a blend of up to 20 to 30 batches is made, all aged separately. The winemaking team, led by László Mészáros, together with Christian Seely, tastes blind to assess the quality of the vintage and choose the best blends for their Tokaji Aszú 5 and 6 puttonyos.
