From the very beginning, the winery has been committed to making natural wines, i.e. wines that are produced with as little intervention as possible in the vineyard and in the winery. This philosophy is reflected in all stages of the winemaking process.
In the vineyard, the use of chemical pesticides and herbicides is avoided, opting for sustainable agricultural practices that promote biodiversity and soil health. Harvesting is done by hand, carefully selecting the grapes to ensure maximum quality.
In the winery, the grapes are fermented with indigenous yeasts, without the addition of sulphites or other chemical additives. The wines are neither filtered nor clarified, which allows them to retain all their purity and natural expression. Vinification is carried out in small batches, using traditional techniques such as the use of oak barrels and terracotta amphorae, which give the wines additional complexity.
The leitmotiv of Andréa Calek 's project is the search for authenticity and the expression of terroir. Her wines faithfully reflect the characteristics of the soil and climate of Ardèche, offering a unique and genuine experience to consumers.
