In the heart of the Salnés Valley, where the granite marks the pulse of the landscape and the Atlantic breeze shapes the character of the vineyard, the Zárate family has built an intimate relationship with the Albariño. From this deep connection with the land and Galician tradition comes Zárate Orujo Tostado, a distillate that goes beyond the conventional. It was Eulogio Pomares who decided to recover the almost lost art of Galician toasted brandy: an artisanal, slow and uncompromising production that respects the essence of the grape and its environment.
Winemaking
The starting point for Zárate Orujo Tostado is exclusively Albariño pomace from our own vineyards, to which are added press musts and fermentation lees. After pressing, the pomace is kept in 220-litre tanks, where it undergoes spontaneous alcoholic fermentation for approximately one month. During this time, it is essential that they do not come into contact with the air to avoid acetification.
The artisanal distillation of Zárate Orujo Tostado is carried out just after fermentation is complete, normally from the second half of October onwards. A traditional copper still is used, made by Manolete, the last great boilermaker in Galicia, in Os Peares (Ourense). Only the heart of the distillate, the purest and most aromatic fraction, is preserved. The toasted colour is achieved by the addition of caramelised sugar, following the classic recipe for toasted brandy.
Flavour
Zárate Orujo Tostado offers a warm and enveloping nose, with aromas of dried flowers, camomile, aniseed, Galician herbs and a delicate touch of caramel. The palate is silky and structured, with notes of candied citrus, fennel and sweet spices. The finish is long, subtly toasted and with an austere elegance. A distillation that honours the past with a contemporary look, perfect to enjoy slowly, like a whisper that lingers beyond the last sip.
