Description
In the Salnés Valley, where the Atlantic mists caress the vineyards and the granitic soils give character to the grapes, Bodegas Zárate keeps alive a silent tradition: the distillation of its Albariño pomace. Not as a by-product, but as a tribute to the land, the fruit and the ancient Galician "aguardenteiros". Zárate Orujo is born with the same philosophy that guides its wines: authenticity, respect for the origin and minimum intervention.
Winemaking
After the Albariño is pressed, the pomace -skin, pulp and seeds- is collected and stored in 220-litre tanks. There, they begin a spontaneous alcoholic fermentation that lasts about a month. The cloudy musts and thick lees are also fermented, which adds complexity to the final Galician eau-de-vie. During the whole process, contact with air is avoided, thus preserving its integrity.
The artisanal distillation begins towards the end of October, just after fermentation, and is carried out in traditional copper stills, made by Manolete, the last master boilermaker in Galicia, in Os Peares (Orense). Only the 'hearts' and part of the 'heads' of the distillate are used, discarding the 'tails', in order to achieve a fine, balanced orujo.
Two experienced aguardenteiros conduct this artisanal process: three hours of distillation to obtain just 16 litres. Slowness is part of its essence.
Flavour
The result is a crystalline Albariño eau-de-vie, incisive but elegant. On the nose, Zárate Orujo displays notes of green citrus fruits, aniseed, fennel and a mineral background reminiscent of the Galician landscape. The palate is dry, precise, with an integrated warmth that does not overwhelm. Long, saline and persistent, it preserves the Atlantic essence of Albariño. A pure, uncompromising distillate that honours an almost extinct tradition with soul and rigour.
