A new Palomino aged in a Sherry cask (a very old Manzanilla cask) under a veil of yeasts, the 2021 Roto was produced with grapes from Cobrana on slate soils, from a cool vintage with malic acid and fresh wines. It fermented in barrel and then was put in the bota where it finished fermenting and soon developed a layer of yeasts, and it matured there for one and a half years. It has a pH of 2.79, over seven grams of acidity and 12% alcohol, incredible parameters of freshness and electricity coupled with the lightness from Cobrana. It has a spicy twist, very tasty flavors and a clearly salty finish. It's super tasty and has the acidity and the tension from the very special grapes. 883 bottles produced. It was bottled in February 2023. The price has not yet been decided.
