Description

Sálvora was born from a very Galician obsession: to listen to the vineyard before listening to the market. Rodrigo Méndez -a restless soul from Meaño- conceives it as a declaration of principles: to bottle the oldest and purest voice of his village. The plot is O Torno, a centenary Albariño vineyard (100%), worked with an artisan, almost family style. There is an anecdote that defines him: when the wine "asks" for time, Rodri prefers to lose immediacy rather than betray its tension, even if that means producing very little and accepting that the wine is not understood at the first time. In the Rías Baixas D.O., here there is no Albariño with easy fruit: the Atlantic commands a salty breeze, cold light and soils that cut like a razor. In Sálvora, the terroir is expressed in a mosaic of granite, sand and a chalky vein, with vines on vines that provide that mixture of finesse and nerve, more wet stone than perfume.

Winemaking

At Sálvora, the grapes are harvested by hand and the selection is precise. The grapes are gently pressed and fermented with indigenous yeasts. The wine is fermented and aged in large format wood, with references to 600-litre barrels, where it remains for 12 months, refining on the lees. The wood does not make up: it accompanies, adds a subtle spicy twist in certain vintages and, above all, sustains the structure and mineral pulse. Production is minimal; there is talk of around 2,000 bottles, bottled in September.

Taste

On the nose, Sálvora doesn't shout: it sharpens. It opens with serious citrus -lemon peel and lime-, a hint of sea saltiness and a background of minerality reminiscent of wet shells and washed stone. With air, the fruit appears in a restrained way: fresh pear, a touch of orange zest, and a fine ginger-like spice that hints at long ageing.

The palate is austere and serious, but deeply addictive: the acidity pushes straight ahead and the salinity gives it a gastronomic edge that makes you salivate instantly. There is an almost effervescent sensation, a tingle of tension that cleanses the palate and stretches the finish with fine herbs and a citrus-saline echo. It is a white wine of conviction: Albariño for cellaring, mineral, long, and best with patience.
