The NV Tradicion Pedro Ximenez 20 anos VOS, produced from Pedro Ximenez grapes and aged in a solera for an average of 23-25 years (which was originally purchased from Domecq & Harveys), is bottled ‘young’ to preserve the character of the grapes and make it more drinkable. The alcohol is also kept at the allowed minimum of 15%. It lacks the rancio notes of others, and is looking for the balance between age and fruit, raisins, dates, dried plums, cappuccino coffee, and licorice while following the clean and precise profile of all the wines they produce. The palate is equally balanced and elegant. This little monster has around 420 grams of sugar, and should be served at 12-14? C. The wine gets more focused with a little time in the glass. Drink 2013-2018.

Description
The Jerez sun not only ripens the grapes: it transforms them. This is how Pedro Ximénez Tradición 20 Years was born, a wine that is a testimony to patience and heritage. Founded in 1998 by Joaquín Rivero, Bodegas Tradición recovered the art of old Jerez wines with a clear conviction: to respect time and honour the grape. This sweet wine is made exclusively with Pedro Ximénez, raisined in the sun in the albariza fields - a white, porous, almost magical land. The decision to make a pure, long-aged version of PX was, at the time, almost counter-cultural, but the result is a prodigy of concentration, texture and elegance. We are in the heart of the Jerez-Xérès-Sherry DO, where the warm, dry climate and Atlantic winds forge wines with ancient soul and modern tension.
Winemaking
After natural raisining in the sun, the grapes are pressed and partially fermented, stopping fermentation to preserve their natural sweetness. The wine then enters a system of criaderas and soleras, where Pedro Ximénez Tradición 20 Years rests for more than 20 years in American oak casks. Its average age is over 22 years, with a residual sugar concentration of around 420 g/L, which gives it a seductive density. Annual production is very limited: just 3,800 bottles, all unfiltered, in order to achieve the maximum expression of the wine.
Taste
The first impression of Pedro Ximénez Tradición 20 Years is almost tactile: thick, velvety, enveloping. Layers of dried figs, prunes, espresso, bitter cocoa and hints of liquorice unfold. Its sweetness is overwhelming but never heavy, thanks to a lively acidity that brings balance and freshness. The texture is silky, almost creamy, and the finish lingers with echoes of toffee, candied black fruit and dark chocolate. It is a wine that does not seek to please immediately, but to conquer slowly, with depth and presence. Perfect as a dessert on its own or with blue cheeses, vanilla ice cream or simply on its own, facing the night, as great wines are drunk: unhurriedly.
