Description
The Parés Baltà Electio wine is made from Xarel-lo grapes, carefully selected from vineyards over 74 years old, located at 325 metres above sea level.
These are vines with a marked Mediterranean character that have been certified for using organic and biodynamic methods, which ensure the natural expression of the fruit, avoiding the addition of chemical products.
Winemaking
The Parés Baltá Electio wine is classified as organic, as the soil fertilisation process is carried out without the use of chemical elements.
For this, the integration of sheep and the pollination of bees in the flowers are used, in order to maintain a natural balance between the soil and the vines. After ensuring that the fruit is at its optimum state of ripeness, it is harvested and then carefully selected so that only the best of the harvest is macerated.
This last process is carried out by leaving the skin of the fruit on for a short period of 4 hours. The grapes are then gently pressed and fermented for 18 days in French and Hungarian oak barrels.
Finally, it is aged on its fine lees for a period of 4 months with periodic batonnage.
Taste
The Parés Baltá Electio wine is a creamy white wine with aromatic tendencies of white fruit and accentuated floral tones. In the mouth it tends to be ample and unctuous at first, and then brings freshness and balance to the palate. It has a pleasant fruity sensation, with very characteristic mineral tones.

The Parés Baltá Electio wine is a limited production and therefore maintains an important exclusivity. It is ideal for pairing with seafood, white fish, blue cheeses and red meats.
