Description
Parès Baltà Còsmic is a white wine produced by the Parés Baltà winery, a blend of Xarel-lo and Sauvignon Blanc grapes, the former being the most present in this wine. These grapes come from two estates located between 500 and 690 metres above sea level, within the Penedés Designation of Origin.
Winemaking
In the production of Parès Baltà Còsmic wine, the techniques used in the cultivation and harvesting of the fruit respect the winery's philosophy, which stipulates that they are carried out under the parameters of ecological and biodynamic agriculture.
The harvesting process is carried out by hand, to ensure that the fruit reaches an optimum level of ripeness when it arrives at the winery. Consequently, the vinification phase of the grapes is carried out separately, on the understanding that each variety expresses itself differently in the fermentation process.
The grapes are destemmed and lightly pressed to extract the must, then macerated for 4 hours, and finally fermented in stainless steel barrels for a period of 12 days.
Then, it undergoes an ageing phase for 3 months, remaining in contact with its own lees and finally being bottled.
Taste
Parés Baltà Còsmic is a wine that denotes subtlety and elegance with its pale yellow colour with golden and green reflections. In terms of aroma, it is classified as intense, denoting a very accentuated fruity and floral expression and certain citric tonalities with mineral notes.
In terms of taste, it is fresh and smooth, with a balanced level of acidity and a long finish with a subtle bitterness.
