Description
Navazos OVNI PF was born from a rebellious and lucid intuition: the idea that Palomino Fino, a grape historically reserved for fortified wines, could shine on its own, without flower, without a header, without the need for disguise. The idea germinated between Equipo Navazos and Coalla, two names that have revolutionised the way of understanding Andalusia wines. Faced with the more rigid tradition of the Marco de Jerez, they decided to offer a new reading of the territory: a dry, direct white wine that speaks from the subsoil and not from the veil. The grapes come from old vines planted on the Miraflores la Baja estate in Sanlúcar de Barrameda, one of the areas closest to the Atlantic. Here, the vines sink their roots into the albarizas -white, chalky soils with a high calcium carbonate content- which act as natural water reservoirs and express the minerality of the terroir like few others. The Atlantic climate creates a constant tension in the grapes, between the humidity of the sea, the winds of the Guadalquivir and the luminosity of the south. It is precisely this daily struggle that gives character to the wine: sober, saline, deeply linked to its origin.
Winemaking
The vinification of Navazos OVNI PF is approached from the minimum intervention, without renouncing to technical precision. Once the grapes have been harvested, they are gently pressed and the must ferments in stainless steel tanks at a controlled temperature. Any contact with the flor is deliberately avoided, thus breaking with the traditional logic of the Marco. The wine is aged for a short period in the same tanks, seeking to preserve the varietal purity and the imprint of the soil. There is no wood, no veil, no artifice: just grapes, soil and time.
Taste
As the glass approaches, Navazos OVNI PF reveals an austere but evocative profile: notes of wet limestone, sea salt, raw almond and citrus peel. There is no exuberant fruit, but a quiet, mineral elegance that unfolds slowly. On the palate, the attack is sharp, dry, sinewy, but at the same time there is a subtle density, a texture that adds gravitas without losing freshness. The acidity is moderate but precise, and the long, saline finish leaves a tactile sensation of chalk and nutshell. A radical white wine in its simplicity, which thrills from its silence. Ideal for those in search of purity, territory and a new way of understanding the south.
