Description

In the heart of Ambonnay, where the chalk sprouts from the heart and the vines breathe tradition, Marguet Sapience Oenothèque Premier Cru was born. The idea was born not as a project, but as a vision: to create the first biodynamic Champagne in the region, a wine that would defy the codes and worship the soil. Benoît Marguet - a fifth-generation vigneron and fervent advocate of biodynamics - brought together three key figures in the movement: David Leclapart, Vincent Laval and Benoît Lahaye. Together, they selected Premier Cru plots in Cumières, Vrigny and Trépail, where Chardonnay, Pinot Noir and Pinot Meunier grow without synthesis or concessions, between plant infusions, animal traction and active listening to the vineyard. It was a brave gamble: to renounce chemistry, commercial times, and certainties. But the soul of Marguet Sapience Oenothèque Premier Cru lives in this risk.

Winemaking

Each variety (50% Chardonnay, 25% Pinot Noir, 25% Meunier ) is vinified separately in oak vats, where it ferments with indigenous yeasts and no additives. No malolactic fermentation takes place, thus preserving the wine's natural tension and energy. After a two-year refinement in wood, Marguet Sapience Oenothèque Premier Cru is bottled for its second fermentation, unfiltered, unclarified, with no added sugar (Brut Nature). The wine then rests on its lees for almost a decade before disgorgement, allowing an integration that only time can grant. The result: a cuvée of meditative, precise depth, resting between tension and silence.

Taste

The first contact with Marguet Sapience Oenothèque Premier Cru is almost ethereal: very fine, discreet bubbles, as if not wanting to interrupt. The nose opens with ripe citrus fruits - lemon confit, pink grapefruit - followed by dried white flowers, toasted almond and a noble reduction reminiscent of the great Meursault. There are notes of gingerbread, wet chalk, incense and a faint smoky echo that adds mystery. The palate is sharp, ample, with a vibrant salinity that caresses the palate. The wine flows with structural elegance, between chalky tension and restrained amplitude, leaving a trace of lemon zest, dried flowers and nutmeg. Its persistence is long, serene, almost meditative.
