There is a white 2024 Albillo Real, a co-fermentation of grapes from Cebreros and 30% from San Esteban del Valle that have more acidity. The grapes fermented with skins for one month, and the wine matured 25% in amphorae with flor and 75% in second-use barrels. After aging, it was blended and bottled, but some of the amphora wine was kept for a longer élevage and to create a solera of biological wine. It has some lactic and smoky notes with a spicy twist and a more Burgundian profile than the majority of whites from the zone. The palate is very tasty and has granite granularity and a long and chalky finish. This is really different but very good. There are some 1,000 bottles. It was bottled in August 2025. This is sold without appellation of origin.
